Hi everybody!
I've been brewing for a month now, and I have three batches under my belt so far. The first was intended to be a Trappist style, but due to modifcations made by the peson teaching me to brew which I did not understand at the time, I think it's coming out more like an amber. The second is a porter I flavored with vanilla, chocolate, and hazelnut. The third is a Christmas ale, the recipe for which I designed myself.
All my recipes have been extract with specialty grains. The first batch has been conditioning for three weeks and tasted pretty good a few days ago. The second batch has been in bottles for almost a week, and will be tasted tomorrow. The third batch has been fermenting for three days.
I've used Nottingham dry yeast all three times, but after reading about yeast quite a bit recently, I think I'm going to switch to White Labs liquid yeast for my next batch. I'm totally loving this new hobby, and plan on trying to brew a batch every other week! I think my next batch will be either an oatmeal stout, or a more informed second attempt at a Trappist.
