What exactly makes it a grand cru? I've seen a few different types of beer labeled as grand cru so perhaps it's an aging thing?

When used to describe beer, often Belgian beers, it usually means a premium version of the brand. It is not a style per se, but a style (like Wit) that is kicked up a bit in ABV and flavorings.

Its a wine classification that is sometimes loosely appropriated to beer. It doesn't really mean anything but the general connotation is "special".

It literally means "great growth" and in wine is a classification given to certain wineries along with similar classifications like premier cru "first growth" which are used in varying ways in different wine growing regions but the use is always regulated.

Well, sort of. It is supposed to be the best beer a brewery produces. The kind of beer they are proud to showcase as their top notch beer. Sometimes, it just means a bigger version of a normal beer (see Blue Moon) but often it is something totally unique.

Interesting, that would all make sense. I had a Belgian quad grand cru from a local brewery that was really awesome but I wasn't sure why they called it that. Thanks for the help everybody.
