Making a 7 gallon batch of a spiced holiday ale. What are your thoughts on this grain bill? Im shooting for 9-10% abv


15 lbs Two Row
3 lbs wheat malt
2 lbs honey malt
1 lb 8 oz crystal 40
1 lb caravienne
1 lb amber malt
1 lb amber dme (for color and extra gravity :drunk: )

9.6% abv as is and is 14 SRM (right around what i want, looking for a deep red). Im going to be putting a lot of extra time and money into this batch and i really want it to be good so any advice is helpful. Thanks
 
That will be a lot of sweetness with 4.5 lbs of honey/cara/crystal malts that will all provide unfermentables. I'd probably back the honey malt down to 8 oz and the C40 down to a pound, it will still be sweet, but not cloying. You can add more 2 row or wheat to make up for the lost gravity.

Otherwise looks solid to me, good luck.
