hey everyone, hope all is well in the far out universe. great here and looking to get better. i bought one of those brewers best gose kits to get my feet wet and I'm hooked. the whole process was fun and i really liked the final product. I've been on a gose kick for a bit and really wanna get in to the all grain process now. id also like to try and get some fruit into the process. maybe strawberry or blackberry. so here are my questions.

1.could someone please turn me on to a traditional all grain gose recipe that i can finish off with some fruits?

2. does the fruit mess with the fermentation process and in turn change my bottle sugar amounts?

3. why is everything so awesome?
 
That's pretty ambitious to jump right into all-grain. I'm not saying it can't be done, but make sure you do some research. It's not that it's particularly difficult, but there's more room to screw things up.

  1. Here's one I used last year. I soured post-boil, but the next time I make it, I plan to kettle sour. I'd also consider increasing the coriander a little bit. If you kettle sour, you can also play around with the hops a bit (e.g. use non-aged hops). My mash efficiency is usually around 85%, so you'd need to adjust accordingly.

    3.0# Weyermann Pilsner Malt
    4.5# Weyermann Pale Wheat Malt
    0.5# Weyermann Acidulated Malt
    0.5# Rice Hulls
    14g Aged Hops (60 min)
    28g Coriander (whirlpool)
    21g Trader Joes Himalayan Sea Salt (whirlpool)
    0.5t Wyeast Yeast Nutrient
    Wyeast 5335 Lactobacillus pitched for 4-5 days before yeast
    WLP029 German Ale/ Kölsch Yeast

    Mash at 149F for 60 minutes, 90 minute boil, ferment at 67F.
  2. Add your sanitized fruit after primary. This helps retain more fruit character. Just make sure you have stable gravity readings over a couple days then prime and bottle same as you would any other beer.
  3. It just is...go with it.
 
thanks a bunch. i did an extract brew and found it was sort of like...cheating. ill give this a go soon. I'm running the gose recipe off of milk the funk. look fun.
 
Don't worry about going all grain if you feel comfortable with it. I spent about a month reading this forum then jumped right in. I have never done an extract or a kit. But a little research and then making a procedure to follow just like you would have in kit instructions worked for me.
