Go Winter Bock!

When I bottled this Bock, It didn't taste right to me. The alcohol was way to evident in its aroma (ABV ~5.7%) and it had quite some residual sweetness. Even after 2 weeks in the bottle the alcohol aroma was still there and I though this would be a lost batch. It had a rather sluggish fermentation that I tried to speed up with more yeast and warmer temperatures.

But now, after 3 weeks in the bottle, the alcohol aroma is gone. I never thought that aging even affects how evident alcohol in in the smell of the beer.

I think I just learned again how important "Relax, have a Home Brew" actually is.

And finally I spent $10 on an important piece of my brewing equipment, a Gold Membership to this forum .

Did you ever buy a good beer, like a Unibroue product, and keep it for a really long time? Only bad beer gets worse with time.

seems to me that only filtered beer gets worse with time. That refreshing taste seems to loose it zip. Homebrews lack refreshment but contain a warming character that grows with time, pretaining that oxidation doesn't take its course.
