Morning all,

Quick question for you this morning regarding glass carboy sterilization. I decided to use heat, vice sanstar, to prep my carboy for a brew this weekend. I followed directions in Palmer's book, placing the carboy in the oven with tinfoil covering the neck. I left the carboy in the oven at 340 for sixty minutes.

I noticed condensation in the carboy a few hours after taking it out of the oven, which I know is a natural process of cooling/heating. My assumption (this is where I, the inexperienced home brewer, am asking help from the collective knowledge on here) is that the small amount of water that has accumulated on the inside is:

-Sterile and will remain that way as long as the foil stays on top of the neck
-will not adversely effect the outcome of the brew

Your assumptions are correct. I'd still pour it out though just in case. But then again, I'm the type of guy who thinks the government is watching him.
 
That sounds like an aweful amount of wort. I clean my carboy when I'm done using it as a primary by soaking it with a PBW solution for an hour or two, and then going to town with a brush if needed. Drain. Rinse with cold water, and set aside until brew day.

Brew day, get carboy. Give it a rinse. Then, 1/2 hour before flameout, fill it with iodaphor and water. Right before flameout, dump it into one of my buckets that I'll have other things in that will need to be sanitized. Wrap some sanitized foil over the mouth of the carboy until I'm ready to use it.
 
Wow! I have to say what a TOTAL waste of energy heating it for an hour in the oven. I have never, ever, not even once, ever sanitized my carboys. Hot water and no rinse cleanser and never, ever, not even once, ever had a sanitation issue with my beer (or wine).

Cleanliness is good, and if you want to sanitize, that is great, but the oven is overkill to the extreme. Iodophor or starsan is more than enough for anyone. For me no rinse cleanser is enough.

That's what I figured. There's not enough to even poor out, just a bit that has collected on the sides.
