Hi,

I'm very new to brewing and would love to make a very strong ginger root beer please.

I bought these:
  • 15 LITRE FERMENTATION VESSEL
  • SAFALE S-04 DRIED ALE YEAST (11.5G)
  • CHAMPAGNE YEAST 80G
  • CANDY SUGAR CRYSTALS 1KG- DARK ****
  • BREWING & WINE MAKING SUGAR 1KG (DEXTROSE MONOHYDRATE)

How do I go about making this ginger beer?

I just made one, it's fermenting now. I cut and peeled about 2lbs ginger root boiled that in water with two cinnamon sticks, some fresh cardamon, and dried nutmeg for about 20 mins. And melted 4 lbs of brown sugar and 1 pound of white sugar in another pot. I combined the two added 8 Ozs lemon juice and topped off to 5 gallons with water. OG was 1.050, cooled to 80 degrees and pitched 1 packet Of Montrachet yeast. 3 days in I am at 1.035. I want to stop fermentation in a few more days. I prefer some residual sweetness, I just take samples and try them until the desired flavor is reached. My goal is a session ginger ale like reeds but with between 3-4 % ABV.
