Hello. I'm considering brewing a west coast style IPA this coming 4th of July and I'd like to add some ginger. I recently had a Ginger Big Eye at Ballast Point and was really impressed. Does anyone have any guidance on quantity of ginger to use in a 5 gallon batch. I'm pretty sure Ballast point use fresh ginger.

I'd imagine not a ton, fresh ginger can be really potent. Maybe 1 or 2 oz?
