thinking about using ginger... at what point in the boil should i add it for a crisp yet not overwhelming flavor? How much to use?
 
I made a ginger stout- boiled 3oz of ginger for 60 minutes. It's present, but not overwhelming. For crisp, I think you'll want to add it later in the boil. For not overwhelming, I think you'll want to add a small amount. I think the ginger beer scratch/soothe-your-sore-throat burn comes from adding it post boil, more.
