General question about sodium metabisulfite.

HI everyone, I'm really trying to get some information on the the efficacy of sodium metabisulfite as a general disinfectant/sanitizer. I have made wine/mead in the past so i know its uses in homebrewing etc.

THe main question here for the real smarty pants and science geeks is, does sodium metabisulfite kills ALL microbes? Such as all bacteria's and fungus's primarily? Not so concerned with viruses. ( no not an idea for covid sanitation haha) But maybe it could be useful for that as well? And when the solution evaporates is plain old harmless salt left behind?

I really appreciate some expert opinions here as I am seeking an alternative use for sodium metabisulfite solution ASAP that will act as an all purpose/general method of disinfecting and sanitization.

Yes, sulfite kills fungi and bacteria.

Using 1 Tbsp of the sulfite and 1 Tbsp of citric acid per US gallon is what I would suggest as a no-rinse sanitizer.

And when the solution evaporates is plain old harmless salt left behind?
Yes, sodium citrate from the suggested formulation.

It's worth mentioning that the SO2 gas can be corrosive, so it shouldn't really be stored, especially since it loses potency relatively quickly.
