I always double check my temps between two thermometers... until the day BOTH of them weren't working (battery dead in one, spilled hot water on the other)... so I reached for an unproven electronic one. My mash temp was a little low so I added some hot water. No change. Scooped out some of the mash, brought it to near a boil, added it back... temperature goes DOWN. .... take out a little more, bring it right to a boil... add it again.... temperature drops a degree and a half... wait a minute... there is nowhere to buy a new thermometer at 11pm ... make a guess by poking my finger into the mash. It seems hot. Add ice. .... etc.... for an hour...
*shrug*
Eventually gave up and decided to just let it mash overnight...
Doing the boil now and efficiency seems okay. If this beer is awesome, it will be a shame, because it is completely unrepeatable!
