If I get a refrigerator thermometer and have the temp set at 65 degrees and clear out all the shelving ( except one shelf for my beer of course ) couldnt I put my 5 gal bucket of wort in there for the 3 week fermentation period..? If I want to try a lager I can set the temp at 40 degrees, if it gets that cold..
 
better yet, tape the temp probe on your thermostat directly to the side of your fermenter. then you can keep the fermenter itself, rather than just the air around it, at the temp you want.
