Just brewed an all grain stout less than 12 hours ago. The yeast has been pitched. I just realised there was a bag of lactose sitting on the counter which should have been added.

Is it too late to add it now? And how should I add it? I'm worried it won't dissolve if I just toss it in.

Make the thickest lactose simple syrup you can. Dump it in a pan, put in enough water to just cover and boil it. Cover it with a lid, let it cool, dump it in.

Yeast ain’t gonna eat it anyways, doesn’t matter when it’s added.

OK cool. I didn't think it was fermentable. It's just for flavour and mouthfeel?

I always wait to add mine until bottling day. Then I can adjust the amount based on taste, and add it along with the priming sugar. Easy peasy.

Sold! Sounds like the easiest way. I'll add it to the pot when I boil the priming sugar.

Only used lactose once. It's effect on beer is surprisingly negative, frankly. Forget about using it. Easy.

That's what I did. Last milk stout I brewed, I made the same mistake. I just boiled it, chilled it, then added it to the keg when I transferred the beer...

Ok sorry my phone is being stupid or I’m just tech impaired today. Anyway what kind of stout are we talking? If it’s a tropical or non flavored just roasted grains deal I’d leave it. If it’s a dessert stout you can add it to secondary or bottling.

It's the Triple X sweet stout from Brewing Classic Styles book.

That is, it's an English style with Black Patent, crystal, chocolate and Kent Goldings

If you do decide to add it take a gravity reading before you add it and then immediately afterwards once it's fully mixed in. Add the difference between those two readings to your OG.
