I forgot to add the irish moss addition to my boil. I know it'll still be fine but I like the extra settling I get from it. Is there something I can add to the fermenter (gelatin?) that will help me to get better settling and better clarified beer on this batch.
 
Most of the time I just crash cool for clearing.

For gelatin, I mix one tablespoon into 1/2 cup of warm water and stir.

Bring the mix up to about 150 degrees on the stove until it's dissolved. Do not boil.

Cool slightly and then add to secondary just before racking in your beer from the primary. THe swirl of the siphoning action will mix it.

You'll see some pretty dramatic resutls in about 24 hours.

Let it sit for at least 3 days.
 
I found a couple packages of sure-jell in the cupboard. Are these essentially gelatin or do I need something different

I've never heard of sure-jell.

I'd play it safe, go get some unflavored gelatin at the grocery store.

Mix it with 1/2 cup of cold water...heat to near (not completely) boiling. Cool and add it to your wort when you transfer to the secondary.
 
I think sure-jell contains pectin and is used for making jams and jellies. Not the same thing as gelatin.
 
Historically, various substances such as egg whites, blood, milk, and Irish moss have been used as finings. These are still used by some producers, but more modern substances have also been introduced and are more widely used, including isinglass, bentonite, gelatin, casein, carrageenan, alginate, diatomaceous earth, pectinase, pectolase, PVPP (Polyclar), kieselsol (colloidal silica), copper sulfate, dried albumen, hydrated yeast, and activated carbon.

Yeah I copied and pasted that. If you forgot the irish moss, try the Polycar.
