I'm guessing this is asked before but I cannot find it. I'm trying to carb using the "set it at 30psi for 2 days then reduce to serving pressure" method. However, I have 2.5 gallon kegs. Should I therefore only keep it at 30 for 1 day?

Yes, with the same surface area exposed to the headspace, less volume will carb faster. Lacking better information, a linear approximation (half the time for half the volume) is probably ok.
