So I made this beer with POM juice and it doesn't taste horrible but more sour than I care for, would adding maybe some blueberry or cherry extract at bottling help balance the flavor?

I added a 32oz bottle of POM at flame out, 30oz after fermentation started then 30oz with 1oz Amarillo into secondary..

Either, really.

It's only going to mellow so much. You added a lot of sugar and some acids. The sugars convert to alcohol -- which is acidic -- and the acids from the juice remain. You have a very acidic beer. The only two ways to balance it will be to blend it with a sweeter beer or add unfermentable sugars. If you add flavor extracts you're not going to do much in the way of changing the acidity.
 
so i decided to steep four bags of pomegranate tea in a cup of ho water and mix with my priming sugar... didn't boil the water or sanitize the tea bags.. this was a last minute random decision.. was that a bad idea?

The tea was Bigelow Pomegranate green tea. ingredients: green tea, apple, natural pomegranate flavors with other natural flavors (soy lecithin), hibiscus, rosehips, licorice root
 
Generally speaking bacteria shouldn't be an issue at 192. I definitely wouldn't recommend doing it that way though. Might be some really strong flavors from the tea bags. I also feel that pomegranate tea is sour in itself. You might have made it worse. Either way give it time. The flavors will eventually mellow, but it could take months.
 
Tried one last night and it wasn't bad, all I got from the tea was some aroma. It doesn't taste bad just a little strange but easy to drink. hopefully will be better in a few weeks.
