Bottled my first Chardonnay tonight....RJS Cellar Classic Winery Series Chile Chardonnay and I like it! Now, that could have something to do with there being 2 1/2 big ass glasses left in bucket and the loud buzzing in my ears! But, even though brand spanking newborn, it's pretty nice. It paired very well with a Catfish Picatia and pasta......OK, I hacked that recipe, but I hate chicken and had catfish.
The only tweak I did was to add the zest of a small grapefruit....doesn't taste like grapefruit, just a touch brighter. Next time....I'm going to spilt the batch and try a little oak.
