I made my first batch using freestyle, picked my own grains etc. I made a honey peach lager. I put the adjuncts in the fermentor. Fermented for about 8 days. Used geletin and cold crashed for 3 days, in hopes the sediment would drop. I racked to bottles to carbonate. They are still going. Wednesday will be 2 weeks, at the time I will chill and test one bottle. I checked and a lot of sediment has dropped, but now it looks like a thick layer at the bottom of the bottle. Will this effect the flavor? Is there a way to rack with less sediment? I was thinking of buying another brew keg and transfer from the one I fermented in, to a clean one, then rack to bottles, any thoughts on that idea?

If you are going to bottle condition there will be sediment. Transfering from the fermentation/brewing keg into a small carboy for second fermentation will help. I went ahead and got a second brewing keg and a 3 gallon carboy and a 3 gallon FastFerment. I have been buying double of each pack I have been brewing because then shipping from Pico is free. I transfer from the 2 brewing kegs into the 3 gallon carboy and pitch one of the two yeast packets. I have been letting that ferment for about two weeks and transferring to the FastFerment conical for a week or two of second fermentation followed by a cold crash. The FastFerment is great for kegging or bottling beers. When you add the priming sugar drops to the beers it will always result in some sediment but if there is not too much sediment I actually like the taste of it. How did your freestyle turn out? I just did a saison freestyle pack but it is not done yet so I have no idea if it turned out. I am impressed with the Pico C so far. Every beer I have had from it has been awesome! I have not tried anything in the little keg it comes with only bottle conditioned with it and they have been great.
