My coopers Stout is bottled now. ok so i know i'm supposed to wait almost 2 weeks but i decided to crack one open earlier just to get an idea of how they were coming along.Today is day 4 in the bottle and it is slightly carbonated and at first tastes somewhat fruity likened to the taste of banana but after a few seconds i can taste the roasted malt and chocolate sort of begins to come through, i'm not noticing much fusel taste which i what i was worried about seeing as it fermented between 70 and 78. Any thoughts?
 
I usually wait 3 weeks. They won't be fully carbonated for about a week. They just keep getting better the longer you wait. Sounds like you're on the right track, though. Congratulations!
 
The banana taste could be from the yeast in suspension eating up the priming sugar. Was this something you tasted in the beer prior to bottling? If it wasn't there before I'd bet its the yeast and will clear up once they're fully carbed. Give it the 2-3 weeks if you can stand it :) and try another one after you let it chill for a day or so.
