Ni Hao Yall.

I live in Taipei and I started making wine last year on a grad student budget. There aren't brewing supply stores over here so I did everything from scratch including catching my own yeast.

I've recently made a trip stateside and visited a brewing store. I pretty much grabbed one of everything thinking I'd sort out recipes later. Needless to say I should have planned better.

So here's the first of many noob questions to come. Can I make a beer with mostly unmalted grains and a small amount of malted grains?

I ask because I knew I couldn't put a full grain bill in my luggage so I picked up Three 1lbs bags of various malted grains. I found a local feed store that has all kinds of grains so I was thinking I could use those for the bulk of my grain bill.

From my research I think I could do a "cereal mash" to make use of the unmalted grains.

Along with everything I purchased stateside I also picked up a container of amylase enzyme. Would this help in the process?


Second but short noob question. My bottle of Star San was removed from my checked luggage even though it was 3 deep in heavy duty ziploc bags. Is there a substitute for a no-rinse sanitizer? They sell 95% Isopropyl in the stores over here. Would that work?
