Hi all, just wanted to send a big thanks for all the information i have gotten from the forum. Special thanks to SKMO for calming me down. My Wheat beer has been in the bottle for 17 days now. I couldn't stand it and put a couple in the fridge at 13 days and poured one later that evening. I must say that it was better than i expected. I wasn't expecting a great beer just one that was drinkable, and i got that. I tried another this evening and it was even better. Just wondering how long it will continue to improve. It is a bit thin and a little cidery at the end, but i thought it was pretty good! I'm hooked and already planning 2 batches out. The information and the people here are over the top, Thanks again to all
 
The sad conundrum about homebrewing is that often the last bottle in a batch is the best bottle. The prevailing wisdom is that homebrew (as a general, but not hard and fast, rule) does not age well (in comparison to wine, for example), but that the conditioning process is CRITICAL to ensuring a great and balanced flavor. Many here will condition for 3 to 4 weeks, or far longer, to help ensure that the beer is balanced, and that the yeast have had the chance to not only carb up the bottle, but clean up after themselves too.
