Hi, I just opened this fermentation to prepare for bottling. Any idea what this is and if it's safe to drink?

Smells quite nice too.

Thanks Dr.Jeff
I racked to a second container. The attached photo shows what is dead yeast. Pleasant smell too.

That's all good. The yeast hasn't dropped yet, but that's not a problem. I'd leave it alone for a few more days or cold-crash if you can. If you've already bottled, you'll have a little extra yeast in the bottom of the bottles, but yeast trub is full of vitamin b complex. Enjoy!

Gracious thanks to Dr. Jeff, AKtom and Lumpher for your insights. You will have noted that I'm knew to cider fermentation, so your guidance is most appreciated.

The previous responses are incorrect. That is not "yeast rafts", but rather a pellicle. It indicates the presence of wild microbes and oxygen.

Yes, it's safe to drink. Try to minimize oxygen exposure.
