Currently got this kit brewing for about a week+ now:

Which uses 1lb of honey in a 5 gal batch. I followed the kit instructions which call for adding the honey at the start of the 1hr boil with the other malt ingredients.
However, I was reading the Beer Smith blog and their post on Honey:

In addition to the different heating recomendations, talk about the increased fermentation time from Honey due to the complexity of the carbohydrate profile. Not sure if the one hour boil would cleave those carb chains or not.
I was originally planning on giving this ~3weeks in primary (~60F), and if the SG was stable, bottle it up. Does that still sound like a reasonable plan, or should I plan on this taking a little longer?
