I'm brewing a NEIPA soon, and have decided to go w/ Omega Yeast Tropical IPA. I'm going to use FastPitch as a started 3 days before brew day, cold crashing it the day before, then dumping the wort, and just using the slurry on brew day.
I plan to primary ferment at 80F w/ a blow-off cane (will be using the Ss BrewTech FTSs2 system). On day 3, I have 2 dry-hop additions, and then again at the start of secondary fermentation. My question is, should I adjust my fermentation temp after primary fermentation has completed, or should I keep it at 80F until secondary fermentation is completed and I'm ready to cold-crash?
