So I have a spare fridge here and a built stc-1000. I was wondering is everyone hooking the plug straight into the temp controller or actually bypassing the thermostat in the fridge

Mine is plugged into the controller no by-pass, works fine. set thermostat to full cold and let the STC-1000 do the controlling.

I wasn't sure if that could possibly hurt the fridge turning it on and off that often. But I also didn't want to rip it apart if I didn't have too

How often it is cycled can and should be limited via the controller you choose. Some call it ASD or anti short cycle delay or something else but I set it to 10 minutes minimum.

One of the function settings should be for time out for the fridge to reset. I've set mine at 5 min. but to each their own.
