Hey all - my girlfriend and I will be brewing our first BJCP-proctored homebrew competition submission later this week. We were hoping for some feedback on the recipe, particularly from any BJCP-certified judges who would be willing to critique this!
We are going to brew a saison. The recipe sounds tasty, but we want to make sure that we won't get dinged too many points for using a hop that's potentially out of style... We thought the Pekko's flavor and aroma characteristics would actually go great with the BJCP-outlined style guide of a spicy, herbal, peppery beer. Obviously, it's not a traditional hop for the beer, like saaz or goldings.
Here is the profile from YVH for Pekko: PEKKO HAS A COMPLEX HERBAL CHARACTER THAT CAN BE LIKENED TO MINT, JUNIPER, OR SAGE. BECAUSE OF THIS, THE BITTERNESS COMES ACROSS AS VERY CLEAN AND CRISP WITH A PLEASANT BITE.
