My wife and I love winter warmers once the weather turns cold. I was going to brew up the same base beer and try several different spice combos this year. I was going to use per-blended mulling spices and the spice blend from "Brewing Classic Styles". I'll probably try a few different combos of "winter" spices as well. What is your go to blend of spices for a Winter Warmer?
 
I personally love making a spice tincture with bourbon or cognac and then doing a dosing test. I'll set out 6 samples of the beer at 50mL each and dose them at 1, 2, 3, 4, 5, 6 mL to get a ratio. From that you can scale up to the entire batch and make sure you're not overdoing the spice profile

I also find that the bourbon and cognac add a nice hint of oak and warmth which I like.

My personal tincture that I have made to date was 400mL cognac, 2 pieces of candied lemon peel, 2 pieces of candied orange peel, 1 cinnamon stick, 1/16 tsp nutmeg, 1 vanilla bean, and 3 toasted american oak cubes. I let it all soak together for 4 weeks and ended up dosing at a ratio of 4% (2ml/50mL beer)

It smelled like pure christmas
