Fat Tire recipe disappointment--help troubleshooting?

Hi all,
I found this recipe here and brewed it:

"So I brewed what I'll consider my take on Fat tire, I wanted a bit more of the biscuit and no so sweet so:

2.5lbs Maris Otter
1lb Victory
1lb Biscuit
1/2 lb Crystal 20L
6oz lb Cara Munich
1/2 oz US Pearl (60)
3/4 oz Czech Saaz (60)
1oz Williamette (15)

1 gal @ 120F soak for 20
+1 gal and @ 150-152F for 60
+1 gal @ 170F sparge
boil for 60
+6lbs ultra light

WL001 @ 70

Any comments? Just finished last night, first time for a partial mash."


With all respect to the original poster\brewer I find it too sweet. Body is good, color ok, clarity pretty good, nose excellent, head beautiful but the taste is just sweeter than I expected. Is it the crystal? I don't care if its a match,but I had fat tire 2-3 years ago and I do not recall this flavor.
Any thoughts are appreciated. I'm just a little bummed, my last beer was so good ( dead guy clone)and this isn't so much.

To be more correct I didn't use the listed yeast. I used 2 slaps pals of 1214 Belgium Abbey Wyeast

Seems about right.

From what I've observed, CaraMunich adds a bit more sweetness than you get with the equivalent weight of regular crystal malt. My guess is that if you left the C20 as is, dropped the CaraMunich and replaced it with either more M.O. or DME you would find it to be more to your liking.

Edit: just saw your clarification on the yeast. That would make a pretty big difference. That basically makes the brew a Belgian and they can be a bit on the sweeter side. If you had brewed the recipe as it was written, I doubt you would have been as disappointed.
