Well, makes sense because Charles Bamforth from UC Davis wrote some of the well known textbooks on brewing, Chris White of White Labs was also a contributor, Morten Kielland-Brandt is a very famous yeast microbiologist formerly from the research institute at Carlsberg Brewery in Copenhagen, now elsewhere. These folks know what they are talking about.
 
Carlsberg Institute at the Carlsberg Brewery in Copenhagen is one of the more important sources of knowledge in brewing science and yeast microbiology and biochemistry in general. Here is a photo of the main gates of the brewery and the front of the research institute.
