I have been looking for examples of false bottoms on a rectangle cooler. I haven't seen any. What is the reason for using a manifold instead of a false bottom?

I would assume because nobody manufactures a rectangular false bottom, and manifolds are generally easier for DIY.

If you have to ability to make your own rectangular false bottom, then there's no reason it wouldn't work just fine.
 
False bottoms and manifolds are just ways to separate the wort from the grains. I use a nylon paint strainer bag. It does the same thing but without getting grains under the false bottom or getting the manifold clogged during the drain. Just lift the bag of grains when the mash is over and it will drain. I've even used 60% unmalted rye and it still drains.
