So I wanted to try out some recipes from "Extreme Brewing." Most of the recipes are for extract brews but I prefer to do all-grain. I was wondering if anyone has some good, or standard conversion for calculating how much grain to use, and of what, to replace the extract used in the recipe. Right now I was just using ProMash to figure it out, but if there are better ways out there I'd love to hear em.

Use the calculator, promash in your case. It's going to depend on your personal mash efficiency.
