Extract Recipe: 7 lbs. LME - Pilsner

Hi all, I'm planning to do the Black IPA recipe posted from BrewHut. It calls for 7 lbs of extract but of course Maillard Malts and other company's produce 6 lb. cans or 3.3 lb cans. Can I either reduce the amount I use by a pound and still expect a similar result? Or, should I buy more than I need and save the rest? Does LME expire quickly after opening?

You could reduce your volume to become the same gravity as well. That or make up the difference with DME.

Liquid extracts don't seem to last as long especially after being opened. But it's also extremely messy trying to split a bag (I've not used the cans). It would probably be fine for a week or so. I'm not too experienced with saving it though.
