I'm wanting to make a funky cider similar to what the French make (minus the keeving).
Does anyone know if the dregs form Etienne Dupont's Brut du Normandie are viable? I know they use wild yeast and don't filter or pasteurize, but wasn't sure if they bottled with champagne or not.
I've looked on Tonsmiere's site and they aren't listed as viable, but not sure how many people are trying to use cider dregs.
