Need a list of suggested equipment for 5 gal batches, all-grain
Kettle, mash tun, wort chiller, fermenter, pumps, etc.
Have quite a bit of wine making eqpt, so I have hydrometer, siphons, etc.
Size and material, for example:
Stainless vs plastic vs glass car boys, etc
Want to make IPA so need best equipment for hop additions and dry hopping etc.

The set of possible hot-side solutions runs from a single vessel "Brew In A Bag" rig through a 3 vessel dual or even triple pump HERMs, and everything in between.
All of them can brew killer beers - even IPAs :D

Might need to focus a little...

Agreed, there are so many options.... One vessel a grain bag and a heat source. 2 vessel and a pump. 3 vessel all gravity. 3 vessel and 2 pumps. Electric, induction, propane, natural gas.....

Budget?

10 gallon vessels for the brew is good. 6 - 6.5 gallon fermenters. I prefer PET. Glass, IMO, is too dangerous. And stainless steel is too expensive.

I think you are going to have to do a lot of reading on the differences and come up with a direction in which to head. After you get some direction we can be of more help.
 
You don't need a pump for a 5 gallon batch. The "cooking" side of brewing can be pretty simple, if you want it that way.
My IPA's and all my other beers got a lot better when I got my kegging setup going.
If you have a cool basement, you can get by without temperature control, but then won't be able to brew ales when the really hot weather kicks in.
So you should be looking beyond the actual brewing of the beer and think about managing your fermentation and packaging.
