Wine is made from fruits (mainly grapes), assuming you're making banana only must, you don't need enzymes. Even if you add sugar to it, it won't need any enzymes. Enzymes are needed only when you're dealing with grains/adjuncts etc and making wort. Brandy is made by distilling wine.
It'll be helpful if you can share your recipe.
