Hi All

Here is my English IPA. I have some whole leaf Fuggle and Goldings I need to use.

For a 6 gallon batch:

10 lbs Pale Malt - UK
1 lbs torrified wheat
.75 lbs medium crystal - UK
.75 lbs amber malt
1.5 oz midnight wheat

Mash at 148.

1.75 oz Challenger for 60 minutes
.5 oz each fuggle and golding for 20 minutes
.5 oz each fuggle and golding for 10 minutes
1 oz each fuggle and golding for 20 minutes post boil recirculated with my hopback once it cools to 150f.
1 oz each fuggle and golding for 3-4 days for dry hop

Ferment with WLP002 or similar.

1.052 OG
~52 IBUs (aiming for a 1:1 OG:IBU ratio)
12 SRM

Thoughts?

What is the opinion on base malt for an English IPA? Pale, Golden Promise, or Maris Otter? I feel the latter two will be too rich for the style, but I could be wrong.

I would simplify if I were brewing it. Use the top three malts, leave off amber and MW. MO (along with torrified) would add plenty of the toasty, biscuit character that the amber wouldn't be missed. And, I think you'd have plenty of color with the medium crystal (i.e. 75L).

I would only use 0.25oz each of golding and fuggle for dryhopping (i.e. 0.5 oz total dry hopping), the other 1.5 could be put in the steep/hopback.
