Anyone doing sour mashes in their e-Kettle? I'm curious what your technique is and how its worked out for you. Planning on doing a sour mashed saison next weekend when my e-biab is complete.

I recently did a sour mash Berliner using my eBIAB setup and it worked very well. I set my PID to 100*F and left it covered for 24 hours. (I was a little apprehensive to leave it on unattended, but I didn't have any problems.) Next time I make a Berliner I am going to let it go longer, since this one wasn't as sour as I would have liked.
 
Good to hear that it worked out for you. I just thought about doing this today, but didn't know how it would turn out with a e-biab.

Thanks for the reply. I am finishing up my eBIAB this week and plan on doing a simple beer to test it out and then onto a sour mash saison similar to Myrtle from The Commons Brewery in Portland.
