I have a self made kettle with electric. Got the orface and pid from brewhardware. I have the brew commander. Has anyone ever done kettle souring with the pid and orface on to keep the temp at 85-90F so the lactic bacteria will grow and drop the ph. I am not sure of leaving pid and electric orface on a few days is fine or not. Planning on doing a Gose.

This is my usual process for kettle souring on electric. I use the probiotic pills with the 299v strain and I can get to the pH I want in about 36 hrs. I have had no issues with this.
