Got a wheat fermenting away that I am going to add elderberry to. Made this last year with elderberry puree and it turned out good. However, it seems the interwebs have run dry of elderberry puree somehow. Does anyone know where I can order such a product or if I can use a concentrate or extract? The elderberries here are not yet ripe so I can't make my own puree. I could order them online but they are crazy expensive. I included a link below, wondering if I could just add this to the wort after primary fermentation...... Or is this too risky?

FV1: Empty: this wkd - Goldencock Summer Ale (with fresh lemon peel)
FV2: Empty: this wkd - Bushytail Ale (Pale Ale w/ Canadian malts)
FV3: Elderberry ? Wheat

Bottle Conditioning:
Nut Brown Ale
Blonde Ale

In my fridge:
English IPA
Weizen
Session IPA
 
Checked the ingredients on that concentrate, and it contains potassium sorbate which would inhibit fermentation to some degree, but it also contains a bunch of other fruit juices too. It doesn't look like it has any ingredients manufactured solely for medicinal purposes.

Neat idea with the elderberry addition. hope you can find some elsewhere.
 
Interesting. I wonder how much of that to use though for my 5 gallon batch of homebrew. Surely not the entire 32 oz
 
Yeah, the whole container would definitely be too much. I'm sure some sketchy math would probably get you close enough...

1. amount of puree that you used last year x (64/640)
2. amount of puree that you used last year x 0.75 (to account for lack of solids) x (64/640)
