Wednesday I'm dry hopping my ipa, and I was wondering if using a stainless steel nut would be hazardous to the beer? I'm using it to weigh down the mash bag filled with hops to get a more even dry hop.

Boil that nut. I've used stainless steel bolts in the past. When using an ounce of hops in a bag you'll find that you will need quite a bit of weight to keep 1/2 ounce to an ounce of hops down on the bottom. Even pellet hops will tend to want to float with several large (3/4'' diameter) bolts.
