I just got a 10 gallon stainless steel kettle. Is it OK to just wash and use? Or do I need to condition this like a Aluminum kettle?
 
No conditioning is necessary with SS. You should be good to go.
 
No conditioning needed, just a little prewash and shes ready for the wort..
 
Technically it does, but it passivates by itself very, very quickly unless you've hit it with a torch. You're fine. If you do hit it with a torch, you can get it to repassivate with a little Bar Keepers Friend (oxalic acid). Great stuff.
