I'm using LMS with a no boil beer kit, and some dextrose from bulk barn. If I use LME from the tap and the brew shop, do I need to boil it? Or is the sugar content so high that it kills off infection anyways?

It would be nice to have a simple no boil kit again.

Cheers.

No, you do need to pasteurize it to sterilize but boiling isn't necessary. When I brew extract I add all my LME at knockout and let it steep for several mins before chilling to pasteurize it.

I would definitely try to get it up over 150F since it isn't from a can, not that it is necessary - but just to be sure. I do "no boil" kits every once in a while, but I use canned LME when I do.

When in doubt, boil it. Kills off any potential infection. Sanitzation is very important and boiling stuff keeps it sanitized.

When you're lying on the ground unconscious.

Or, in brewing, it's when you end the boil. (i.e., knockout the flame)

Yup. I've been doing it this way for over a year now. Since pasteurization happens at a minimum of 162F,I just mix remaing DME/All LME at flame out. Then cover & steep 15 minutes, since temps are still 180F+. Then chill, etc.

But the OP won't have knockout/flameout, since he wants to do a no boil.

Or am I missing something?

I'm new at this. What does knockout mean? A few of you guys have used it.

Knockout or flameout is the end of the boil when you kill the burner.

But the OP won't have knockout/flameout, since he wants to do a no boil.

Or am I missing something?

Nope, I think you're right, he said no boil. I've never done a kit and kilo type kit, so I'm not sure... But I'd think you'd want to at least add the LME to pre boiled, still near boiling temp to pasteurize. Unionrdr does a lot of things with Cooper's cans, he'll probably have better insight on that than I.

I'm considering a few options. My next experiment is to create a brew based on just 2 liters of LME, bittering hops (galena) and either flavouring or dry hopping with cascade. The guy at my local Home brew shop gave me a taste of something he dry hopped with cascade without flavouring hops and I gotta say, the cascade flavour came through. Nicer than anything I've had from a kit so far.

However The reason I posted was to find out if I could easily substitute LME for Dextrose, or spray malt. Pasteurizing for 3-5 minutes seems like a small concession for better beer (as opposed to boiling for an hour). Thanks much you guys.
