Do i have to boil bannana for wine

Every recipe says to boil but I was always told boiling fruit changes the outcome of wine some one let me know plz

Banana wine is the one wine where I have a boil, but I boil the skins. You don't ever have to boil anything, but I've never done banana wine differently.
