I just listened to a Brulosophy podcast comparing beers made with 100% lme to 100% dme. Their findings were that the lme beer was darker in color than the dme beer, and had a somewhat different mouth feel, but that the two beers tasted virtually identical. In my own experience I prefer dme, because it is truer to style in color, and to my pallet leaves less of that syruppy flavor and mouth feel in the beer. If you throw in some stepping grains, you can make a pretty decent beer with either option though.

Cheers!

It seems that DME has a better shelf life. When I do get LME, it's from the LHBS bulk storage. I trust the place just fine but when you compare that to packaged DME, you can see that it's not been exposed to air in any way.
