I've been reading up on building a frozen yeast bank, and I'm curious about dividing the yeast cake. If I wash my yeast, divide it in half, and freeze it properly, once it has thawed (gently) for use will I need a starter if I plan on using half of the washed yeast? In other words, will half of the washed yeast cake alone be enough for quick, healthy fermentation, or will I still need to make a starter? I hope that doesn't sound too complicated. Thanks for the help!

I would want to make a starter to prove the viability of the yeast.

Are you using a large glycol solution to store your frozen yeast? Otherwise, freezing breaks down the cell walls of the yeast.
