Question:

Am I able to disconnect my tapped keg for a few days to force carbonate another keg? And of course re-connect it back to the original tapped keg. Thanks.

assuming the keg has no leaks around the gas poppet, yes.

some of my kegs only seal when connected...the bane of cheap used keg purchases.
 
Even if CO2 leaks out when disconnected you can still carb it back up. Check for leaks when you disconnect it and if not leaks you should be in even better shape.
