Before I got iBrewMaster for the iPhone I used BrewTarget. Free, very intuitive, and great for recipe building and brew day.
 
QBrew is another one I have used. It's pretty simple, mostly for putting together a recipe but it doesn't include many calcs or tools like the others. (Might need to download KDE dependencies for it though, if that is an issue for you).

Brewtarget and Beersmith work great on Ubuntu/Kubuntu.
 
Agree on Beersmith. It is a little spendy but once you are familiar with all its options it is a very powerful tool.
