I was hungry and inspired by the Food Network show "Chopped" a couple weeks ago and dreamt up this quick n easy recipe that my foodie family loved, so I thought I would share.

To start, I sautéed some chicken in a bit of oil and then added a bit of sesame oil (I've used rotisserie chicken with great results). Once the chicken is almost done, I threw in a few dashes of rice wine vinegar to deglaze, and then throw in some eggs and scramble. Then I shake Indian curry powder and garam masala until the color of the eggs and chicken change color from the seasoning. Add salt to taste. This finishes the filling of the tacos. Then heat up some flour tortillas. We use the small, 6" ones. Once the tortillas are ready, I spread a jalapeño Greek yogurt (I get it at Costco. It comes in a quart size tub with a red lid) on the tortilla and place the chicken and egg on and finish with Sriracha.

I realize that there are no real measurements included, so you will have to rely on some of your cooking instincts, however I enjoyed it so much I had to share.

I'd love to know what you think if you try it, and maybe some added steps or ingredients you may have tried.
 
Sounds interesting! I'm kind of new to the whole curry thing.

I love curry, and if you're new to it, I'd suggest heading over to your local Asian store (if you have one) and go for the Thai styles which you can find in paste form in small 1.29 cans. My personal fav is the Maesri brand and that small can goes a long way. Serve over some jasmine rice.. very tasty. It's almost like a chili too... I'll put anything in it.

forgot to mention, the thai is spicy as hell unless you go for the sweeter yellow ones. I've had success with the Shan brand on indian style curry for something that isn't so spicy.
 
Curries rock! Plenty of Asian/Indian supplies in my area to play with, no recipes,only guidelines, make it up as I go along is my motto.;)
