I was hungry and inspired by the Food Network show "Chopped" a couple weeks ago and dreamt up this quick n easy recipe that my foodie family loved, so I thought I would share.
To start, I sautéed some chicken in a bit of oil and then added a bit of sesame oil (I've used rotisserie chicken with great results). Once the chicken is almost done, I threw in a few dashes of rice wine vinegar to deglaze, and then throw in some eggs and scramble. Then I shake Indian curry powder and garam masala until the color of the eggs and chicken change color from the seasoning. Add salt to taste. This finishes the filling of the tacos. Then heat up some flour tortillas. We use the small, 6" ones. Once the tortillas are ready, I spread a jalapeño Greek yogurt (I get it at Costco. It comes in a quart size tub with a red lid) on the tortilla and place the chicken and egg on and finish with Sriracha.
I realize that there are no real measurements included, so you will have to rely on some of your cooking instincts, however I enjoyed it so much I had to share.
I'd love to know what you think if you try it, and maybe some added steps or ingredients you may have tried.
