Special Instructions
  1. mash all but acidulated malt @152 for 30 minutes in 3 gallons strike water
  2. add acidulated malt ,mash 30 more minutes.
  3. sparge to kettle to preboil volume
  4. boil for 15 minutes ,add lime zest, whirlfloc tablet .do NOT add hops yet.
  5. chill to 95*F and add half the container of Goodbellys lactobacillus planarum(in this case Pomegranate/Blackberry,8 oz)
  6. cover kettle ,seal with saran wrap and allow to sour for 24-48 hours or preferred level of sour
  7. return to boil (15 minutes) add Hops ,chill and pitch US-05 allow to ferment 3 - 4 days under closed fermentation
  8. add blackberries and lime juice , allow fermentation to finish ,then package .
