Looking for some insight about a cream ale. I finally found a beer my wife adores....a simple cream ale with sweet orange peels (10min boil). I love the fact she loves it so much, that I have dedicated one of our taps to ensure she always has her favorite flowing. The cream ale is friendly enough for almost everyone. Here lies the problem....we are running through 5gal batches pretty quickly.
Currently, we are frequently brewing the orange cream ale to ensure a backup keg. Brewing the cream ale is very simple and I am not doing a secondary for the ale. Question- After a week of primary, could I rack to keg and set under pressure for a week before serving? Would this allow enough time for this simple cream ale to further settle and also carb at the same time?
If this is the case, ensuring a happy wife/life would be a little easier. Thoughts appreciated and welcomed.... I appreciate the feedback from this group.
